How to make Mexican Street Corn (Easy Elote Recipe)
When making this easy Mexican street corn, you can cook the corn however you like. I prefer to roast it with butter in a skillet.
You can serve street corn on the cob or off-the-cob in a bowl – the latter is what I prefer.
Add corn and butter to a skillet. Roast until slightly browned.
Once the corn is cooked, add in lime juice, spices, mayonnaise, and cheese. Stir until well combined.
Top with chopped cilantro and lime wedges.
It is also a great side or topping for sweet potato tacos.

Dip – Grap your favorite tortilla chips and use this recipe as a great dip option.
What kind of corn to use?
Fresh corn on the cob – Fire up the grill and roast a few ears of corn. Brush the corn with butter and grill for about 2 minutes on each side. Once cooled, use a knife to cut the kernels off the cob.
Frozen sweet corn – No need to thaw the frozen corn. Add the kernels to skillet and roast with butter or olive oil for about 10 minutes.
Canned Corn – This is the cheapest and quickest way to make this recipe. Drain the can, add to a skillet, and roast for 10 minutes.
