This noodle soup recipe is one of my favorite comfort foods and is on the menu regularly during the winter because it doesn’t require many ingredients. It’s truly a fuss-free dinner.
How to make the best chicken noodle soup
Ingredients:
Olive Oil
Carrots
Peas
Onion
Garlic Cloves
Chicken Broth
Wide Egg Noodles
Parsley
Shredded Chicken
Salt and Pepper
Directions:
In a large soup pot, add olive oil, carrots, onion, and garlic.
Saute for about 3-4 minutes.
Pour in the chicken broth, noodles, peas, and salt & pepper. Bring to a boil.
Reduce heat and simmer for about 10 minutes or until noodles are al dente.
Add in chicken and parsley. Simmer until the chicken is heated.
Serve hot.

- 1/2 Onion, diced

- 8 cups Chicken Broth
- 2 cups Wide Egg Noodles
- Parsley
- 2 cups Shredded Chicken
- Salt and Pepper
Instructions
- In a large soup pot, add olive oil, carrots, onion, and garlic.
- Saute for about 3-4 minutes.

Tips for making chicken noodle soup
Cut the carrots into larger chunks. This keeps them from getting soft and mushy while the soup is simmering.
Want a thicker soup? Add a couple of tablespoons of flour or cornstarch to the recipe. Add the starch slowly until you get the thickness you desire.
You can make this recipe in the crockpot as well. Add all the ingredients except for the noodles and cook on low for 8 hours. Then add the noodles about 30 noodles before you are ready to serve.
If you don’t want to cook chicken from scratch, you can use rotisserie chicken or canned chicken.
