This chicken soup recipe is one of my favorite comfort foods and is on the menu regularly during the winter because it doesn’t require many ingredients. You can pile it high with your favorite toppings or eat it without any toppings. It’s truly a fuss free dinner.
How to make Chicken Tortilla Soup
2 cups chicken broth
2 cups cooked chicken, shredded
1 can petite diced tomatoes
1 can green chilis
1 cup chopped carrots
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder
2 tsp chili powder
In a large pot, combine all ingredients and stir.
Bring to a boil and then turn to low and cover with a lid.
Let simmer for 10-15 minutes.
Serve with favorite toppings such as shredded cheese, avocado slices, sour cream and jalapeños.
Tips for making this easy chicken tortilla soup
Instead of all the seasonings, you can substitute them for a packet of taco seasoning. This is great for when you are out of certain spices.
You can also use leftover chicken or canned chicken. Whatever you have on hand will work!
