It’s the ultimate comfort food without all the hassle of traditional lasagna. With a few simple ingredients from the grocery store, you can easily whip up a delicious bowl of soup.
I am all about soups in the winter. My family requests soup recipes often, especially the bacon broccoli cheese soup and cheeseburger soup. So of course I had to start adding this lasagna soup to the mix as well.
This dish pairs perfectly with a chopped salad or my easy cheddar biscuits.

Ingredients for Lasagna Soup
Ground beef – Can substitute for ground turkey or Italian sausage
Noodles – I used Sfoglini Whole Grain Reginetti (but you can use your favorite pasta noodles!)
Onion and garlic – Classic ingredients that add plenty of flavor
Beef stock – Helps create the soup consistency
Pasta Sauce – Traditional marinara sauce makes for a great base. (Can also use petite diced tomatoes and tomato paste)
Seasoning – Italian seasoning, oregano, fresh basil, salt and pepper
Cheese – Mozzarella cheese and grated parmesan cheese
How to Make Lasagna Soup
In a large Dutch oven add olive oil and place chopped onions and minced garlic. Cook for 2-3 minutes over medium-high heat. Add in the meat and cook until browned. Drain excess grease.
Stir in pasta sauce and beef broth. (Skip the broth if you want a thicker soup.)
Add in basil, Italian seasoning, and oregano, and bring to a boil.
Add in the uncooked lasagna noodles. Cook for 7-10 minutes or until pasta is tender.
Stir in the salt, pepper, mozzarella, and parmesan cheese. Let simmer for 5 minutes.
Ladle lasagna soup into bowls and top with additional cheese if desired.
How to make Crockpot Lasagna Soup Recipe
To make slow cooker lasagna soup, brown the meat and onion on the stovetop. Then add in all ingredients except for the noodles and cheese.
Cook on low for 8 hours or on high for 3-4 hours.
Cook the pasta al dente and then add to the crockpot. Let cook for 15 minutes.
Stir in the cheese to the slow cooker and serve.
Pressure Cooker Lasagna Soup Recipe
This recipe can easily be made in a pressure cooker or Instant Pot.
Select the sauce function, add in meat, and cook for 5 minutes.
Discard grease
Add in the remaining ingredients. Close and lock the lid.
Select pressure cooker time for 4 minutes.
Let pressure naturally release for about 10 minutes.
Stir the soup.
Serve in bowls and add additional cheese if desired.
How to store Lasagna Soup
Place leftover lasagna soup in an airtight container and store it in the refrigerator for up to 3 days.
Reheat the soup either stove top or in the microwave. Can top with additional cheese before serving.
