I LOVE me some Mexican food. It’s easy to make and there are so many different variety of recipes and ingredients that I never get tired of it. I do however get tired of cooking. So it’s nice to keep a few frozen meals in the freezer and then I all I have to do is whip up a side dish.
Mondays are our busiest night of the week and to make things easier & less stressful we usually eat a frozen meal. This past week I heated up Frontera® Frozen Bowls and made my favorite white spinach queso to go along with it. I especially enjoy the Chicken Fajita Bowl which is made with fire-roasted poblanos, chipotle chiles and rice. How to make White Spinach Queso Dip
Ingredients:
1/2 onion, chopped
1 jalapeno, diced
12 oz white american cheddar cheese, shredded
4 oz pepper jack cheese, shredded
2/3 cup milk
1 can diced tomatoes with green chiles
1/2 cup cilantro, chopped
1 cup spinach, chopped
Directions:
- In large skillet, saute onions and jalapeno until tender.
- Add the cheese and milk. Continue to stir until melted.
- Stir in the canned tomatoes, cilantro and spinach.
- Add to serving dish and enjoy with tortilla chips.
