I LOVE me some Mexican food. It’s easy to make and there are so many different variety of recipes and ingredients that I never get tired of it.
I do however get tired of cooking. So it’s nice to keep a few frozen meals in the freezer and then I all I have to do is whip up a side dish.
Mondays are our busiest night of the week and to make things easier & less stressful we usually eat a frozen meal.
This past week I heated up Frontera® Frozen Bowls and made my favorite white spinach queso to go along with it.
I especially enjoy the Chicken Fajita Bowl which is made with fire-roasted poblanos, chipotle chiles and rice.

How to make White Spinach Queso Dip
Ingredients:
1/2 onion, chopped
1 jalapeno, diced
12 oz white american cheddar cheese, shredded
4 oz pepper jack cheese, shredded
2/3 cup milk
1 can diced tomatoes with green chiles
1/2 cup cilantro, chopped
1 cup spinach, chopped
Spicy White Queso
In large skillet, saute onions and jalapeno until tender.
Add the cheese and milk. Continue to stir until melted.
Stir in the canned tomatoes, cilantro and spinach.
Add to serving dish and enjoy with tortilla chips.
