In a large bowl mix together all the ingredients except for the olive oil.
Be sure to mix well so that all ingredients stick together.
Use your hands to create 6-8 patties with the mixture.
In a large pan, add in the olive oil and het on medium-high heat.
Once oil is hot add the chicken patties to the pan.
Cook on each side for about 4 minutes or until they are golden brown.
Serve hot.
