Loaded Potato Skins
We enjoy ordering potato skins at a restaurants as our appetizers. But since we are eating at home for almost all meals, I thought I would make these as a treat for my son. They are delicious and rival any restaurants recipe!
These crispy potatoes loaded with cheddar cheese, crispy potatoes and topped with onions & jalapeños can even be dipped in sour cream. The more flavor the better!
How to make Baked Potato Skins
Ingredients
- 4 small baked potatoes
- 2 tablespoons butter, melted
- 5 slices bacon, cooked and chopped
- 1 cup cheddar cheese, shredded
- 2 jalapeños, sliced
- 1 small onion, diced
- sour cream, for serving
Directions:
- Preheat oven to 425.
- Cut baked potatoes in half. Using a spoon, scoop out the middle.
- Brush the inside of potatoes with butter. Fill each potato with cheese and bacon.
- Bake for 10 minutes or until slightly browned and cheese is melted.
- Remove from oven and top with onion, jalapeños and sour cream.
This dish is really that simple to make.
How to store the potatoes
You can store leftovers in an air tight container and store in the refrigerator. To reheat, place in microwave for 2 minutes on high or in the air fryer on 400 for 3-5 minutes.
