Mexican food is by far my favorite type of food. I crave it for breakfast, lunch and dinner. Seriously, how does one live without tacos in their life?
Of course, since I eat Mexican food so much, I am always cooking up new recipes so that my family doesn’t get bored eat the same dish every night.
Crustless Taco Pie
This taco pie recipe is absolutely delicious and so easy to make. I always have these ingredients on hand and is a go-to meal. It’s great because it’s made in under 30 minutes!
Ingredients:
- 1 pound ground beef
- 1 package taco seasoning
- 2 cups cheddar cheese, shredded
- lettuce
- Avocado, sliced
- Sour Cream, optional
Directions:
- In a large skillet, brown your taco meat and add taco seasoning as directed on package.
- In a pie dish, add the taco meat to the bottom of the dish.
- Layer with shredded cheese, lettuce and avocado slices.
- Top with sour cream if desired.
What I really like about this dish, is that it’s a favorite dish for those doing low carb or people who aren’t! It’s simply an all around great dinner recipe.
You can also add additional ingredients such as jalapeños, onions and pico de gallo if looking to add more kick to it.
What to serve with Low Carb Taco Pie
Although I typically eat taco pie as an entire meal. But if you want to serve a side dish with it, I recommend a simple garden salad, tomato salad or taco soup. You can even make homemade low-carb tortilla chips to dip in this salsa recipe as well.
This dinner works great with any drink, but I highly recommend serving with this fizzy peach jalapeño mocktail or cocktail.
