30 Minute One Pot Meal
A hearty one-pot meal that can be whipped up quickly is my favorite dinner recipe! I love a good chicken pot pie, but what I don’t like is the amount of time it takes to make. This recipe is simple to make and is on the table in no time.
Ingredients for Chicken Pot Pie Casserole
- Egg Noodles
- Chicken
- Butter
- Peas & Carrots (can use fresh vegetables or frozen)
- Chicken Broth
- 1/2 and 1/2
- Garlic
- Cayenne Pepper
How to make Skillet Chicken Pot Pie Noodles
Using a large pot, add butter. Once melted add in chicken and cook until it’s golden brown and cooked thoroughly.
Remove from the Dutch oven and place on the cutting board.
Add the vegetables and garlic and saute for about 5 minutes.
Pour in the chicken broth and half and half. Bring to a boil.
Add in the chopped chicken, pasta, and spices. Reduce to medium heat and cook for 10-12 minutes.
Remove from heat and let the sauce thicken for 3-5 minutes. Serve hot and top with parmesan cheese if desired.

- 1 package frozen peas & carrots (can use fresh vegetables or frozen)
- 4 cups Chicken Broth
- 2 cups half and half
- 2 cloves garlic, minced
- 1 tsp Cayenne Pepper

Tips for Creamy Chicken Pot Pie Pasta
- Using frozen vegetables is a great time saver. Grab a package of frozen peas and carrots and you won’t have to worry about chopping and is a great shortcut.
- Use rotisserie chicken from the grocery store, leftover chicken, or canned chicken. If you don’t have time to cook chicken, use rotisserie chicken and chop it into smaller pieces. Canned chicken is also a great alternative.
- Heavy cream is also a great choice if you are wanting the recipe to be even creamier. I always use half and half because it’s something I always have on hand.
- Use any noodles you have. I used wide egg noodles, but bow-tie noodles would also work great.
