According to my guys, you can have breakfast any time of day. Especially if pancakes are involved! When my husband and I were newlyweds, he requested to have pancakes once or twice a week. After about a year of eating the same thing over and over again I learned to make different variations of his favorite meal. These cupcakes are by far my favorite and I usually make them as a special treat for my family. These fun treats are perfect for brunches or if you feel the need to justify eating cupcakes for breakfast. Top them with syrup and bacon for the ultimate pancake cupcakes.
Ingredients needed:
2 cups Aunt Jemima Original Mix
1/3 cup sugar
1 cup milk
1 egg, beaten
1/3 cup vegetable oil
Buttercream frosting
6 slices of bacon (I used turkey bacon)
Aunt Jemima Original Syrup
Directions:
- Preheat oven to 425 degrees.
- Place cupcake liners in muffin tin.
- In a large bowl, combine all ingredients until well mixed.
- Fill liner of cups 2/3 full.
- Bake for 15 to 20 minutes or until light golden brown.
- Top cupcakes with frosting, sprinkle on chopped bacon and
drizzle with syrup. - Enjoy one (or three) pancake cupcakes with a glass of cold
milk.
Seriously, this is my favorite kind of cupcake. Pancake, syrup and bacon – um, don’t mind if I do! Oh how I love Walmart for having the best ingredients so I can always supply my boys with breakfast. There is just something about a cool fall evening that makes me want to cook breakfast for dinner and then curl up on the couch with a good book.

That looks quite delicious! Who doesn't love bacon and pancakes. I might substitute applesauce or pumpkin for the oil- I will be making these for the family
