I could eat Mexican food everyday, it’s just so good! This take on taco salad is easy, delicious and is the perfect one dish meal.
1lb. lean ground beef
1 pkg taco seasoning mix
1/2 cup water
1 Frozen pie crust
1 can black beans
1 cup shredded cheddar cheese
1 cup chopped onions
2 cups shredded lettuce
1/2 cup chopped cherry tomatoes
Heat oven to 375 and cook pie crust until slightly brown. Cook ground beef in skillet until thoroughly cooked. Drain, stir in taco seasoning and water. Simmer for 5 minutes. Drain and heat can of black beans in separate pot.
Take pie crust out of oven and spread beef on the bottom layer. Add black beans and then a layer of cheese. Place in oven and cook for 5 minutes.
Top pie with lettuce, onions, cheese, cherry tomatoes and a scoop of guacamole.
