Tacos, tacos, tacos. I love me some tacos! Tacos are so versatile and easy to change them up for whatever mood you are in. Or if you are limited on ingredients, no worries you can still make it work.
I recently made these sweet potato tacos and they are surprisingly packed full of flavor.
Best part is that my son even enjoyed them – he doesn’t like sweet potatoes, but add them to tacos and he devours them!
How to make sweet potato tacos
Ingredients:
- sweet potatoes
- cilantro
- queso fresco
- jalapeno
- chipotle ranch
- garlic salt
- tortillas
Directions:
- Peel and chop the sweet potatoes.
- Place them in the air fryer and sprinkle garlic salt on them. Cook at 400 for about 8-10 minutes.
- Place potatoes on tortilla and top with cilantro, quest fresco, jalapeño and chipotle ranch.
- Serve and enjoy!
