Isn’t it funny how certain things are embedded in your
brain? A certain smell, food or activity that can always bring back a memory or
time in your life? When I think about my dad, specific memories always come to
mind – the smell of his cologne, riding in his truck listening to the Marshal
Tucker Band and his famous breakfast burritos.
especially on Saturday mornings after football games. We all know that high
school football is big business in Texas and my dad was eager to recap the game
with my brothers and discuss their performance. The smell of the eggs and
onions simmering was incentive enough to wake up before noon on the weekends. Even now, when we are all together during the holidays he request that he makes these.
¼ cup chopped onion
1 jalapeno
¼ shredded cheese
Tortilla
salsa (optional)
Directions:
Brown onions and jalapenos in pan. Add eggs and fold into onions and jalapenos.
Once scrambled, add egg mixture to tortilla and top with cheese and salsa.
Serve immediately.

those with same Texas pride. I picked up the eggs and ingredients at my local
Walmart.

Being a transplanted Texan breakfast tacos and burritos are a mainstay of our household. But in our house salsa is not 'optional' – we have it with everything. And it really IS good on eggs. Seriously.
That looks really good! Easy, too, though I'd still prefer to have someone around to make it for me.
Breakfast burritos are super delicious and great to eat if you are on-the-go. They also make for great weekend breakfast too.
We're getting some eggs from a neighbor with chickens so thanks for the recipe. My daughter would love this, especially with the jalapeño in it.

I love breakfast burrito. I don't put eggs because I font like it, Instead I used cheese sausage and a nice sauce that my mom makes.
