I am still going strong on my New Year’s goals of cooking up new and lighter dishes. Gone are the days of frying my favorite southern dishes like pork chops and instead using Mazola® Corn Oil for baking my recipes. In the south, pork chops are always fried! But instead of frying my pork chops, I brush them with Mazola® Corn Oil (made of 100% pure oil with no additives, so the great flavor of your food comes through), and coat them with almond flour instead of all purpose flour. By making a few simple swaps I turned this fried, high calorie meal into a “better for you” meal without sacrificing the taste. Making switches like serving the pork chops with cauliflower mashed potatoes instead of regular potatoes, and broccoli instead of fried okra are great ways to lighten up the meal.

Baked Breaded Pork Chops
Ingredients:
Pork Chops
2 cups almond flour, salt & pepper mix
3 tbsp Mazola® Corn Oil
Instructions:
- Preheat oven to 425º F.
- Place pork chops on baking sheet and coat with Mazola® Corn Oil.
- Then coat in almond flour mixture.
- Place pork chops back onto baking sheet and bake in oven for 15 minutes.
- Serve and enjoy!
