Dinnertime is my families favorite meal. We are all together, not being rushed and can chat about our day. What I love the most is listening to the funny stories my son tells, laughter and the delicious meals! The hard part is finding food that my entire family will eat. My little guy is a pretty picky eater and since I don’t enjoy cooking up a separate dish just for him, I try to put a twist on some basic meals. So the other night when my husband said he just wanted a sandwich for dinner, I thought I would spice up the meal with some Hormel Pepperoni.
I took the idea of a sandwich night and added some ham, provolone cheese, spinach, cherry tomatoes, homemade caramelized sauce and topped with a handful of Hormel Pepperoni to create these mouth watering pepperoni sliders. I just mixed the spinach in with all the ingredients and my son didn’t even realize he was eating something green!
This sandwich is sure to be enjoyed even by the pickiest eater.
1 Garlic clove
In small pan, heat up 2 tablespoons olive oil, minced garlic clove and 1/4 cup chopped cherry tomatoes. Continue to stir mixture over medium heat for about 8 minutes and then set aside.
Butter sandwich rolls, place one slice of cheese and broil until slightly toasted. In separate pan, broil desired amount of Hormel Pepperoni.
Once toasted spread the garlic mixture on the side of bread without cheese. Add the ham, spinach, sliced cherry tomatoes and Hormel Pepperoni. Add the garlic mixture to the top of the bun, sprinkle a little Parmesan cheese and serve.
