Did you know those adorable, cute Ball jars have a purpose besides making them into a craft or using as a flower vase? You can actually use them to can food. Shocking, I know!
I recently used my case of collective elite wide mouth pint jars from Ball® brand to make this Fiery Peach Salsa. This recipe and 350 other canning recipes can be found in The All New Ball Book of Canning and Preserving cookbook.This salsa is the perfect topping for mini chicken tacos or devouring it with chips.
Fiery Peach Salsa
6 cups peeled, diced, hard under-rip peaches
1 cup sugar
1 cup chopped bell pepper
1 cup apple cider vinegar
1/2 cup chopped red onion
1/2 cup water
1/4 cup lime juice
1/4 tsp salt
2 jalapeño peppers, seeded and finely chopped
2 garlic cloves, minced
1 habanero pepper, seeded and minced
1/4 cup chopped fresh cilantro
Combine all ingredients, except cilantro, in a 6-qt stainless steel or enameled Dutch oven. Bring to a boil over high heat, stirring until sugar dissolves. Reduce heat, and simmer, uncovered, 5 minutes. Remove from hear; stir in cilantro.
Ladle hot mixture into a hot jar, leaving 1/2-inch headspace. Remove air bubbles. Wipe jar rim. Center lid on jar. Apply band, and adjust to fingertip-tight. Place jar in boiling water canner. Repeat until all jars are filled.
Process jars 10 minutes, adjusting for altitude. Turn off heat; remove lid, and let jars stand 5 minutes. Remove jars and cool.
